The Verdejo grapes with which this wine is made come from the Pago Familiar Villa Narcisa (La Seca), and are the result of the most personal selection of Javier Sanz.
45 hectares more than 40 years old, with pebble soil on the surface and a clay subsoil that gives the wine mineral notes.
The harvest is carried out manually and mechanically, always at night, taking advantage of the low temperatures that will help preserve the organoleptic characteristics of the fruit.
During fermentation, rigorous temperature control is followed to preserve the aromas of this wine as much as possible.
Cryomaceration, must clarified by gravity for one day, fermentation at less than 15ºC in a stainless steel tank and aging on its own lees for 3 months before bottling.
Brilliant in the glass, with slight greenish reflections. Its fresh aromas are reminiscent of sweet grapefruit and show light notes of anise and fennel. On the palate it is dry, with a medium body and refreshing acidity. Perfect to drink at any time.
