At the foot of the historic Majuelo, the San Cayetano vineyard is located on the southwest hill of Cerro del Obispo, where historic vineyards such as La Riva, Botaina, Viña AB, Valdespino, Blazquez, etc. were located.
We find a soil dominated by Toscas de Barajuelas, and hence the predisposition that the wineries located here found to be able to produce long aging periods in their wines.
The plots used for this wine are 3, with a total area of 1.9Ha, in a “platea” that surrounds the hamlet and mainly faces south, planted with Palomino Fino of about 35 years of average age.
Inspired by the millenary interaction between human beings and this particular land, San Cayetano is a tribute to freedom.
It moves away from the stereotypes of international white wines to forge a unique, authentic identity.
This wine does not seek refreshing acidity, but rather the oxidative sapidity of a grape tanned under the sun, in biological aging taken to the limit, which expands and then concentrates, challenging the concept of minimal intervention and celebrating a human terroir.
San Cayetano, from its stressful Barajuelas, honors the brave people like the Blázquez, De la Riva, Valdespino and the Domecq, who knew how to make the southern slopes of Macharnudo their fortress.
This wine invites us to a future where we do not flee from the sun, but rather seek an alliance with it, in an authentic search for identity for our region and the gold of Cerro Desnudo.
