It is a biodynamic, monovarietal red wine made from Pinot Noir, produced by Domaine Thierry Mortet under the A.O.C. Bourgogne, in Burgundy, France. This wine comes from a vineyard located in the village of Daix, in the famous Côte-d'Or, and is divided into six plots with fine clay soils and limestone rocks.
The grapes are hand-harvested and undergo cold maceration for four or five days, followed by fifteen days of fermentation. The resulting wine is transferred to closed vats for malolactic fermentation, where it stays for about four months. Afterwards, it is racked into new and second and third-use barrels to continue aging for eleven more months.
This red wine is known for its fluidity, with aromas of red and black fruits accompanied by notes of roasted coffee. On the palate, it is harmonious, light, and elegant, with marked acidity, present tannins, and a long finish. It is ideal to enjoy now, but it can also gain in complexity over time.
