Vineyard: This 100% Mencía wine comes from the coolest vineyards of the Bierzo valley, located in the areas of Otero and Villadecanes, planted on clay and mineral soils.
Vinification: A pre-fermentation maceration of 12 to 14 hours is followed by fermentation in stainless steel tanks with temperature control. The result is an elegant, fruity, and sweet wine with floral notes, highlighting the varietal character of the Mencía.

Rosé wine from the D.O. Bierzo, made by Martín Códax in Cacabelos, León. Cuatro Pasos Rosado is made with the Mencía variety. It is macerated with its skins for 18 hours, then pressed and fermented in stainless steel tanks with temperature control, to preserve the aromatic potential of the Mencía.
