The beginnings of this winery were very modest. At first they cultivated their own vineyards and made wines that they would later sell to renowned wineries.

The Pedro Ximénez grapes used to make this sweet wine are sun-dried after the harvest. This traditional method consists of leaving the bunches exposed to the sun to achieve a higher concentration of sugars. Added to this is an average aging of 12 years in the winery, which provides an important range of sensations in the different tasting phases.
