The Pedro Ximénez grapes used to make this sweet wine are sun-dried after the harvest. This traditional method consists of leaving the bunches exposed to the sun to achieve a higher concentration of sugars. Added to this is an average aging of 12 years in the winery, which provides an important range of sensations in the different tasting phases.
