Manzanilla Macarena made with the Palomino Fino grape variety from vineyards in the triangle formed by the cities of Jerez de la Frontera, Sanlúcar de Barrameda and El Puerto de Santa Maria, (Cadiz), next to the mouth of the Guadalquivir.
After alcoholic fermentation, the wine undergoes biological ageing under the veil of yeast, formed by native yeasts on the surface of the wine, in contact with the air. It ages in American oak casks.
Elegant, fresh and light. Pale yellow in colour. Delicate and subtle on the nose. It shows its saline character on the palate.
