Fondillón 1996 “Estés donde estés” from Bodegas Monóvar receives the award for the best wine with biological, oxidative, and mixed aging from the Spanish association of wine journalists and writers.

Description

Very powerful nose, classic, exuberant aroma of aged Monastrell, century-old American oak, wild oak, and very old wood. Honeyed notes. The touches are finely smoked and salty, always returning to notes of old sacristies and ancient woods, very pleasant memories of toffee, coffee, tobacco, carob, fig bread, and toasted almonds. Moderately passified, with notes of caramel and mocha. Pleasant encounter, not very sweet but soft and fortified, between acidic and a bit fiery at first. It walks calmly through the center of the mouth offering notes between caramelized and herbal, some memories of dried fruit and raisin adjusted to its dryness, and a great length that makes the wine eternal on the palate. Its flavor captivates and invites you to try more.

The vineyard’s age is 80 years.

The serving moment is before a meal for an important appetizer or during a long after-meal with desserts, at a temperature of 16/18°C. Manual selection of overripe Monastrell grapes. Destemming, fermentation for 3 weeks with frequent pump-overs. Fermentation finish with 16/18% alcohol and 30 g of residual sugar. Racking and aging in 1,730-liter barrels of old American oak for 20 years.

Its aftertaste of fine woods and touches of dried fruit and walnut skin invite pairings such as a brownie, cookies, cakes, nougat ice cream, an almond tart, or a selection of blue cheeses and hard aged cheeses. It pairs perfectly with village pastas, aguardiente rolls, sequillos, perusas monoveras, and soft turrones and guirlaches.
The Fondillón is also highly recommended for an appetizer, where its slightly sweet flavors contrast pleasantly with salted dishes and all kinds of almadraba, tuna roe, mojama, bonitos, dried cod, and of course with fried almonds with coarse salt.

The bottle should be stored vertically and in ideal conditions, it can be perfectly preserved for decades.
