Three processes allow sugar and aromatic intensity to be concentrated in this wine:
1. Natural drying of the Verdejo grapes that are spread in the sobrao or attic.
2. Frozen grapes: the Verdejo grapes are kept at a temperature always below -4”C for ten days. When pressed, the water continues to freeze while the sugar is squeezed out.
3. Late harvest of the Grossa grape from Moldova, which remains in the vineyard until harvested in December, when its sugar content is higher.
With the must from these three productions, a blend is made that is rounded off with passage through medium-toasted French oak barrels.
It shows a beautiful bright gold color and on the nose it reflects an incredible variety of aromas of dried apricots, figs and orange peel.
In the mouth it is definitely sweet, with a broad and silky body that covers the palate with sweetness and an elegant and balanced acidity, with a subtle hint of wood.

JAVIER SANZ DULCE DE INVIERNO 50CL
Gourmet and unique wine, the result of a cross between the Verdejo and Gorda grapes from Moldova (muscat).
Its sweetness and amber tones are the result of three phases of complex production: freezing the grapes, natural drying in a dark shade and late harvest. After this arduous gestation, it rests for eight months in French oak barrels.
