This signature wine with a very limited production is 100% Tinto Fino from a single vineyard located in the Olmos de Peñafiel plateau.
The winemaking process is very traditional. The grapes are hand-harvested early in the morning and quickly transported to the winery. There, the grapes are destemmed but not crushed and undergo controlled fermentation below 28ºC, carried out with native yeasts, with frequent pumping over and several rackings. The malolactic fermentation is also spontaneous and occurs immediately after the racking.
The wine is aged on its lees for 12 months in 21 French oak barrels and 2 American oak barrels, all with extra-fine grain, with regular bâttonage throughout the aging process.
This wine is naturally stabilized during the 12 months in barrels and is then clarified in the same barrels with a vegetable clarifying agent.
Since it has not undergone stabilization processes, over time, some natural sediment may appear.
The result is an elegant, broad wine that is above all respectful of the excellent raw materials it is made from.
In the nose, intense fruity and floral aromas stand out, giving way to sweeter notes of caramel and toffee as the wine sits in the glass.
On the palate, it is sweet, broad, and round, with a silky texture and slightly sweet, thanks to the ripe, sweet tannins it presents. It is, in short, a long and gentle wine that invites you to keep drinking.
