Variety used 100% Bobal from old vines over 90 years old with productions of less than 1 kg. per strain.
Aging for 15 months in wood and 20 in the bottle.
Cherry red color with a high layer with a violet rim, clean and bright, very oily, good adhesion.
The fruity aromas stand out with hints of strawberry, ripe plum and currant in an intense way, vanilla appears more softly.
Shaking the glass, the aromas of currant and raspberries powerfully stand out mixed with toasted touches of incense and licorice typical of good French oak, integrating perfectly with the wine.
In the mouth it gives an unusual freshness for a wine for aging, it maintains good acidity, which combined with the meatiness makes this wine an appetizing drink with a soft but persistent and balanced finish with great personality.
Ideal with meat stews and cured cheeses, it pairs very well with foie and the combination with dark chocolate is surprising.
