Grapes harvested at night to preserve the varietal qualities of the fruit, lightly pressed. The must undergoes a low-temperature fermentation with specific yeasts that is controlled by daily tastings. Fermentation is stopped by cold in order to maintain the desired properties in the wine.

It has an attractive raspberry pink colour, a bright appearance with violet reflections given its youth.
