Colet Navazos Extra Brut / Brut Nature is a sparkling wine from the Penedés DO, made using the traditional method (champenoise) of secondary fermentation in the bottle, from base wines specially selected from Colet's own estates. The southern influence plays a role in the second fermentation and, especially, in the disgorging liquor.
COLET-NAVAZOS Extra Brut / Brut Nature has undergone 30 months of aging on lees. It is absolutely dry, with practically zero residual sugar. The base wine is monovarietal Xarel·lo, and the southern contribution (usually Palos Cortados and Amontillados) imparts a subtle complexity.
