Manual harvest. Cold maceration of the grapes for 6 hours at 10ºC. Light pressing to obtain the must. Controlled fermentation in stainless steel tanks at 16ºC. The wine stays in contact with its lees for three months. For two more years, the lees are renewed with those from subsequent vintages to help the wine gain structure and aromas.
