The La Honda solera dates back to 1852, probably derived from the Fino La Honda solera. It is located in one of the oldest wineries in El Puerto de Santa María, near the residence of D. Antonio Osborne, former president of the company. The La Honda winery is unique for being below ground level, creating a special microclimate—humid and with a stable temperature—that gives its wines distinctive characteristics.
Made from a collection of 194 casks divided into 4 scales, this Amontillado undergoes a process that includes base wine production, fortification to 15.5% ABV, and 4 years of biological aging. It is then fortified again to 19% ABV and subjected to a long oxidative aging of 18 years in a dynamic criaderas and solera system. For the refreshing process (rocío), a 4-year-old Fino is used, preserving glycerin and smoothness.
In tasting, it displays a deep topaz amber color with defined tears. On the nose, it presents a sharp classic Amontillado profile with oxidation notes, turmeric, noble wood, walnut shell, hazelnut, and hints of toffee caramel. On the palate, it is powerful and well-structured, with vibrant acidity and gentle astringency, revealing flavors of toasted caramel, spices, and candied orange.
