Manual harvest. Fermentation takes place in wooden vats with temperature control. It undergoes aging for 22 months in barrels made in the bodega’s own cooperage, selecting wood from different forests. The wood is made up of 80% French oak and 20% American oak. Prior to bottling, it is clarified with fresh egg whites. It remains in the cellar for at least 9 months to add further refinement and complexity.
The 2020 vintage shows a bright ruby-red color, with a medium layer and a garnet rim. On the nose, the wine is intense and complex. Aromas of wild berries (blueberries and blackberries) stand out, with hints of spices. On the palate, it is long, balanced, and elegant. It features perfectly integrated acidity and soft tannins. It has a very long, fruity finish. Perfect for enjoying now, but thanks to its excellent balance and structure, it can also age in the bottle for several years.
This wine pairs excellently with meat dishes, such as beef chop, as well as cured meats and all types of stews.
