The fermentation always occurs naturally and spontaneously. The grapes will ferment in wooden vats without temperature control and using indigenous yeasts. The maceration is variable but can last up to 2 or 3 weeks. It undergoes aging for 18 months in new French oak barrels from the Allier department. Before bottling, a light clarification is carried out using fresh egg whites.
This wine has an elegant appearance, with a high layer and a remarkable red color that speaks to its youth and potential for evolution. On the nose, there is a high intensity of blackberry and strawberry. Smoky notes from its aging in high-quality French oak barrels stand out, creating an unmatched harmony. On the palate, it is powerful, showcasing the same aromas as on the nose, with a good balance between alcohol and acidity, and smooth, elegant tannins. The finish is very long, leaving a sense of fullness.
This wine pairs well with long-aged red meats, game, or can be enjoyed on its own. We also recommend pairing it with grilled white fish.
