Vineyards of organic viticulture planted in 1999 in Finca Zarcillo and Finca Mejorana. Soils with high saltiness and concentration, and few kilos of grapes per hectare.
The harvest is automatic and nighttime between August 20th and August 26th.
Peculiar maceration in cold for 6 hours, fermentation at 16ºC in stainless steel tanks, and batonage on lees for 2 months.
