Tabatiere is a distinctive white wine made from 100% Palomino Fino grapes sourced from El Perillar vineyard, an albariza soil vineyard with vines planted between 1967 and 1972 in Jerez de la Frontera.
Its north-northeast orientation and limited direct sunlight allow the grapes to maintain freshness and balance. After manual harvesting, the wine ferments and ages for eight months on its lees in stainless steel tanks, adding texture and complexity.
Unlike traditional Jerez wines, Tabatiere is bottled as a still wine, without fortification and without flor, expressing a pure and modern interpretation of the Jerez terroir.
In the glass it shows a pale yellow color with golden highlights. The nose is expressive and fruity, with aromas of apple, melon, lychee and white fruit, accompanied by a subtle background reminiscent of biologically aged Sherry wines.
On the palate it is fresh, smooth and well-balanced, with a gentle creamy texture that coats the palate. Its precise acidity and saline finish add character and make Tabatiere a highly enjoyable and versatile wine, perfect on its own or paired with light dishes.
Production is very limited, with only a few thousand bottles per vintage, making Tabatiere an exclusive wine that reflects the character of the vineyard and the winemaking heritage of Jerez.
