All the grapes used for the production of Valdespino’s estate wines come from the Macharnudo Alto vineyard, located about 5 kilometers northeast of Jerez, at 135 meters above sea level, on albariza soil, typical of the region. Albariza soil is a white calcareous soil known for its excellent water retention.
Valdespino Ojo de Gallo is a wine made from Palomino Fino grapes from the renowned Macharnudo Alto estate, with vines over 25 years old.
After harvesting, the must undergoes fermentation in stainless steel tanks with native yeasts. The wine then stays in these tanks for 6 months on its fine lees after fermentation.
