Manual harvest. Fermentation in wooden vats with temperature control. Aged for 22 months in barrels made in the winery's own cooperage with selected forests. The origins of the wood are 80% French oak and 20% American oak. Before bottling, it is clarified with fresh egg whites. It remains in the winery for a minimum period of 9 months to add greater refinement and complexity.
The 2020 vintage shows a bright ruby red color, with a medium layer and garnet rim. On the nose, it is intense and complex. Aromas of forest fruits (blueberries and blackberries) stand out with hints of spices. On the palate, it is long, balanced, and elegant. It has a perfectly integrated acidity and a smooth tannin. It shows a very long and fruity finish. Perfect to enjoy now, but also thanks to its good balance and structure, it can remain in the bottle for several years.
This wine will pair excellently with meat dishes, such as beef chop, as well as with cold cuts and all kinds of stews.
