The grapes have been manually harvested in 15 kg boxes. After passing through the selection table and de-stemming, they were macerated in contact with the skins for a brief period at a low temperature. They were then gently pressed. Part of the obtained must was fermented in wooden barrels of 500 and 600 liters or fudres of 3,000L, and the rest underwent alcoholic fermentation in oval concrete tanks of 1,600 liters, remaining in lees for approximately four months of aging.
