It is made with grapes from the Salnés Valley harvested by hand in small vine vineyards. After destemming, the grains are pressed and the must ferments at a controlled temperature in stainless steel tanks. This process is interrupted with an intense and pronounced drop in temperature that leaves the yeasts inactive and allows a small amount of natural sugar from the must itself to be released, which will be responsible for the slight final sweetness of the wine.
