Finca La Capuchina cultivates its vineyards in an environmentally friendly manner. The grapes, hand-harvested in the early hours of the morning, come exclusively from the estate. The harvest began at the end of August (Syrah and Cabernet) and ended in mid-September (Petit Verdot). Each variety is picked at its optimal ripeness and fermented separately in temperature-controlled stainless steel tanks.
The vinification of Capuchina Vieja red wine includes a two-day cold maceration, alcoholic fermentation at less than 24ºC, and a quick, natural malolactic fermentation. Afterwards, each variety is aged for 12 months in oak barrels, mainly French, with medium toasting.
Capuchina Vieja is a cherry-colored wine with garnet edges. Its aroma is a combination of ripe fruit, spices, creamy oak, and mountain herbs. On the palate, it is pleasant and tasty, with a toasty touch and mature tannins that give it great smoothness. This wine pairs perfectly with red meats, lamb, game meats, or cured cheeses. It is recommended to serve it at a temperature between 16 and 17ºC and to decant it before enjoying, as it has not been subjected to aggressive processes, allowing it to retain its natural qualities to the fullest.
