The Merlot grape, the main protagonist in the blend, shows no greenness—something that often happens when it is grown in a climate that is too warm, accelerating its ripening. The Merlot in Garum is nourished by the ambient humidity, growing without excessive demands or urgency, enjoying the slow rhythm of the lands of Cádiz.
This winery is located in Jerez de la Frontera (Cádiz) and is owned by the renowned winemaker Luis Pérez, who aims to revive the tradition of red wine production in the Jerez region through this project.
Garum is made from Merlot, Syrah, and Petit Verdot varieties. The grapes from each variety receive different treatments. The farming practices are minimally invasive: fertilization and phytosanitary treatments are kept to a minimum, ensuring the least possible impact on the vines. The harvest is entirely manual, and the grapes are transported to the winery in small 15kg boxes. The grapes undergo a double selection, first in the vineyard and then at the winery on a sorting table.
