Situado a unos 20 kilómetros de la costa, Carrascal, donde se ubica la finca El Corregidor, origen de este vino, es el más interior de los cuatro grandes pagos jerezanos. Las tierras de albariza aportan a la Palomino fino que allí cultiva Bodegas Luis Pérez y que emplea en la elaboración de El Muelle de Olaso ese músculo sápido que le distingue.
