Description

Nighttime mechanical harvesting takes advantage of the cool hours and absence of light to preserve the grapes. Direct pressing combines free-run juice, which provides freshness and aromatic intensity, with a percentage of pressed juice, adding power and volume on the palate.

Must clarification through flotation. Fermentation at 18°C with neutral yeasts to achieve maximum purity and expression of the Verdejo variety. Aged on lees for three months. Clarified and cold stabilized, with final filtration through a 0.65-micron membrane.

Pale yellow color with subtle green hues. A fragrant, powerful nose with classic elegant Verdejo aromas such as white fruits (apple) and stone fruits (apricot), along with hints of hay, fennel, anise, citrus notes, and a slight mineral touch. Broad and long on the palate, with fresh acidity and great persistence.

Ideal as an aperitif and to pair with all types of fish, seafood, rice dishes, fried foods, and Japanese cuisine.
