It carries out malolactic fermentation and a subsequent aging on lees with periodic batonnages for just over two months. The wine is racked into new French and American oak barrels, where it remains for six months. The wine is separated from the lees to spend two more years in barrels.
Dark and deep layer, edged with ruby-colored shine. Delicate balance of aromas on the nose, where it opens with aromas of red fruits, with smoky notes and other spices. The aromas become more complex with the passage of time, evolving to tobacco and leather.

Bodegas Olarra
El Grupo Bodegas Olarra nace en 1973 con la construcción, a las afueras de Logroño, de una bodega para grandes vinos de Rioja. Técnicas modernas, bajo una cultura tradicional.
En 1985 surge Bodegas Ondarre, que exprime al máximo la tipicidad de los viñedos y la diversidad de suelos de Viana. Allí se elaboran vinos de larga crianza y los primeros cavas del grupo.
En el año 2000, se inicia el proyecto de Bodegas y Viñedos Casa del Valle que, con la misma filosofía que los vinos de pago, sigue el clásico modelo Château.
