This monovarietal Tempranillo wine comes from Bodegas Félix Callejo, located in Sotillo de la Ribera, within the Ribera del Duero D.O.. Founded in 1989 by Félix Callejo, the bodega began as the dream of a 16-year-old who took charge of the family business. The grapes come from 40+ year-old vineyards situated at altitudes ranging from 850 to 930 meters, where temperature variations between day and night help achieve the perfect balance in the fruit.
The harvest is done manually, selecting the grapes at their optimal ripeness. In the bodega, the grapes are sorted on two selection tables, destemmed, and transferred to stainless steel tanks for cold pre-fermentation. Fermentation is spontaneous, using native yeasts, with a three-day maceration period. Afterward, the wine is transferred to French oak barrels for six months before being bottled.
Flores de Callejo is the bodega’s youngest wine, characterized by the freshness and fruitiness typical of its youth, making it perfect for immediate enjoyment.
